whipped shortbread

these amazing shortbread cookies melt in you mouth and are super simple to make!




Ingredients:


  • 2 cups butter*
  • 3 cups flour 
  • 1 cup white sugar

  • 12 maraschino cherry's, halved

instructions:
                             

preheat oven to 350.

Mix the butter flour and sugar in an electric mixer for 5 minutes or until the dough forms a ball. Make 1 tablespoon balls and place on a cookie sheet. place a cherry half on the top of each cookie and bake for 15 minutes.

enjoy!

*do not substitute margarine for butter

apple pie

crust:
  • 1 1/3 cups flour
  • 1/2 teaspoon salt
  • 1/2 stick well-chilled Crisco Baking Sticks 
  • OR 1/2 cup well-chilled Crisco 
  • 3 to 6 tablespoons ice cold water

filling:

4 medium apples(royal gala are very good)
3 tablespoons butter or margarine
1/2 cup brown sugar 
1 dash cinnamon



instructions: 
  1. BLEND flour and salt in medium mixing bowl.


  2. CUT chilled shortening into 1/2-inch cubes. Cut in chilled shortening cubes into flour mixture, until mixture resembles coarse crumbs with some small pea-sized pieces remaining.


  3. SPRINKLE half the maximum recommended amount of ice cold water over the flour mixture. Using a fork, stir and draw flour from bottom of bowl to the top, distributing moisture evenly into flour. Press chunks down to bottom of bowl with fork. Add more water by the tablespoon, until dough is moist enough to hold together when pressed together. 

  4. split dough into two balls, 1 slightly bigger than the other. roll the larger ball out on a sheet of parchment paper. flip into pie pan (any size) and trim off access. 

  5. melt the butter in a pan and cook the apples(peeled and cored) with the cinnamon and sugar. pour into pie crust. DO NOT PRE-BAKE PIE CRUST. 
  6. roll second ball of dough out on parchment paper. flip on.press the edges with a fork and prick the middle. bake for about 2 hours at 350.

chocolate chip cookies

These are the softest chewiest chocolate chip cookies ever.



ingredients:
1 cup brown sugar
1/2 cup white sugar
2 eggs
2 1/4 cups flour
3/4 cups butter or margarine
1 teaspoon baking soda
1 teaspoon vanilla
1 dash cinnamon
1 3/4 cups chocolate chips
1/2 cup shredded chocolate(optional but I recommend it!)  


instructions:
preheat oven to 350
mix the butter, sugar(both kinds),eggs, cinnamon and vanilla together until smooth. them add flour, baking soda and all the chocolate. make balls out of about a tablespoon of dough and place on a baking sheet. bake for 7-11 minutes.

the perfect pancakes

these pancakes are amazing!

ingredients:

1 cup flour
1 cup milk
1 egg
3 tablespoons sugar
3 tablespoons vegetable oil
1 pinch cinnamon
1 dash vanilla
2 1/2 teaspoons baking soda
some butter* for cooking


instructions:
mix together all the ingredients. melt  butter* in a medium pan. put about a quarter cup of batter into the pan. Cook till bubbles surface on the top and the bottom is golden than flip. once the other side is golden remove from heat. serve with butter* and maple syrup.

*you can substitute for margarine

apple crumble

Apples:

  • 6 large apples (I suggest royal gala or granny smith)
  • 1/2 cup water
  • 1 teaspoon vanilla 
  • 1 teaspoon cinnamon
  • 1 cup white sugar
  •  1 tablespoon flour 
Oat topping:
  • 1 cup cooking oats
  • 1 cup brown sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda 
  • 1/2 cup of melted butter
Instructions:
Preheat oven to 350
Peel, core and slice apples and spread over bottom of a 8x11" pan

Mix flour, sugar and cinnamon together and sprinkle evenly over apples. Then mix the vanilla into the water and pour evenly over the apples. Set aside.

Mix the oats, brown sugar, baking powder, baking soda and butter together. Crumble the mixture over the apples evenly. Bake for 45 minutes. Let stand for 1 hour. I recommend serving warm with vanilla ice cream.
